Edible Indian Thistle
Edible? Incredibly, yes. Native Americans used it to treat neuralgia, rheumatism, over-eating, and swollen veins. It's used in the medical community today to treat liver problems. But before you dish yourself up a serving, do your research. There are specific rules about identification, preparation, and what parts are edible. Indian Thistle is a member of the sunflower family and grows perennially in the North Cascades, the Olympic Mountains, and Mt. Rainier.
